Sun-dried Tomato Pasta

A simple go-to weekend meal and a tasty break from all your regular pesto sauces.


The entire recipe takes only 15-20 mins, start to finish - perfectly fits the bill for all working moms out there! The recipe is packed with flavors right from juicy, meaty campari tomatoes to chewy, tangy sun-dried tomatoes. Flavored with garlic & mint, this simple recipe is simply adored by kids. One great recipe to have up your sleeve that is easy to put-together and satisfies kids too. A perfect win-win, yayyy.....!!

Ingredients
about 300 gms of gluten-free Penne Pasta

1/4 cup of Sun-Dried Tomatoes, any brand
6 Campari Tomatoes
1/8 cup of Mint leaves, chopped
1 tsp Olive oil

Salt & Pepper to taste


Instructions
Cook pasta as per package instructions. Drain pasta and reserve about a cup of pasta water.

Bring a pot of water to a rolling boil. Use a sharp knife and mark "X" on the bottom of the tomato (opposite to the stem side). Gently place tomatoes into the boiling water with the "X" mark facing up. Boil the tomatoes for about 20-25 secs or until the "X" mark starts to split. Remove the tomatoes immediately from the boiling water and wash it under cold running tap water. Alternatively, you could also place tomatoes into a bowl of ice water and cool them off. Now, if you try pulling the skin out at the "X" mark, the skin would easily come off. Roughly chop and set aside.

Heat a tsp of olive oil in a pan. When hot, add chopped tomatoes and saute until the raw smell goes off. To this, add sun-dried tomatoes. Before adding, roughly chop the sun-dried tomatoes into small bite sized pieces. Let it cook for a min and then, add chopped mint leaves. Give it a quick stir.

Add drained pasta, salt and pepper to taste, 1/2 cup of pasta water and mix until everything comes together. Add more pasta water as needed.

Garnish pasta with julienned mint leaves. Serve hot.

Note
- I have used "Kirkland signature oven-dried Organic Roma tomatoes" from Costco. The oven-dried tomatoes are already salted and packed in garlic-flavored organic olive oil. So I used very less salt & oil in my recipe. If using a different brand, you might have to adjust the quantity of oil & salt accordingly. Also, add 2-3 minced garlic cloves at the start of the recipe for flavor.

- I have used gluten-free pasta, but this recipe will work just fine with any kind of pasta!
